Classic pumpkin pie will always have its superfans, but this exciting new rendition might just steal the spotlight this year. Our million dollar pumpkin tart is rich and creamy with the perfect balance of flavors. Each bite is filled with pumpkin, dulce de leche, and rich chocolate ganache. Finish the millionaire pumpkin tart with a generous sprinkle of flaky sea salt.

Why Is it Called Million Dollar?

All "million dollar" recipes have a few ingredients that lend the finished dish an irresistibly rich, decadent flavor. For some, it's cream cheese or shredded cheese (like this Million Dollar Dip). Here, dulce de leche is what sets this pumpkin tart recipe apart from the rest.

Ingredients

Millionaire Pumpkin Pie Filling

  • 1 cup half and half

  • 1/2 cup canned pumpkin

  • 4 large egg yolks

  • 3 tbsp brown sugar

  • 2 tbsp cornstarch

  • 1/2 tsp vanilla

  • 1/4 tsp salt

  • 1/2 cup dulce de leche

  • 4 oz bittersweet chocolate

  • 1/3 cup heavy cream

  • Flaky sea salt, optional

Rich Tart Pastry Dough

  • 1 1/4 cups all purpose flour

  • 1/4 cup granulated sugar

  • 1/4 tsp salt

  • 1/2 cup salted butter

  • 2 large egg yolks

  • 1 tbsp cold water

Directions

  1. Make Tart Dough

    Prepare Rich Tart Pastry Dough. In a medium bowl stir together all-purpose flour, granulated sugar, and salt. Using a pastry blender, cut in salted butter until pieces are pea size. In a small bowl beat together egg yolks and 1 Tbsp. cold water. Gradually stir egg yolk mixture into flour mixture just until moistened. Gather pastry into a ball, kneading gently just until it holds together.

  2. Press Crust

    Press pastry dough into bottom and up sides of a 9-inch round tart pan with removable bottom, using your fingers to evenly distribute the dough. Chill pastry in pan 30 minutes.

  3. Bake Crust

    Preheat oven to 450°F. Prick bottom and sides of pastry with a fork. Bake until golden, 12 to 15 minutes. Cool on a wire rack. (If pastry puffs in the center, gently press down with a spoon.)

  4. Make Filling

    Meanwhile, for pumpkin mixture, in a medium saucepan whisk together next seven ingredients (through 1/4 tsp. salt) until well combined. Cook over medium, stirring constantly, until mixture reaches 203°F with an instant-read thermometer, 8 to 10 minutes. (Mixture will be very thick; stir constantly to prevent scorching.)

  5. Chill

    Remove saucepan from heat. Add dulce de leche to pumpkin mixture; whisk to combine. Spoon into baked crust; cover surface with plastic wrap to prevent a skin forming. Chill 1 hour

  6. Finish with Ganache

    For ganache, place chocolate in a small heatproof bowl. In another small bowl microwave heavy cream just until boiling, 30 to 40 seconds. Pour over chocolate (do not stir). Let stand 2 minutes. Remove plastic wrap from top of pumpkin filling. Stir ganache mixture until smooth. Working quickly, spread ganache over filling. If you like, sprinkle with sea salt flakes. Cover and chill 1 to 24 hours before serving.
